俗话说“水为茶之母”,而据《梅花草堂笔谈》张大复写道:“茶性必发于水,八分之茶,遇十分之水,茶亦十分唉;八分之水,试十分之茶,茶只八分耳。” 由此可见水质对泡茶的过程十分重要。陆羽《茶经:五之煮》也有提到:“其水,用山水上,江水中,井水下。” 那就是说泡茶用的水的来源也是非常关键的。

 

There is an oft repeated phrase, “water is the mother of tea”. According to Written Conversation of Plum Blossom Herbal Hall, Zhang Dafu writes: “Tea’s nature must be shown in water. When tea that is an 8 meets water that is a 10, the infused tea is also a ten! When water that is an 8 is tried on tea that is a 10, the infused tea is only an 8.” From this we can see that water quality is very important in the tea brewing process. Lu Yu in Chapter 5 on Boiling in the Classic of Tea also mentions: “Of waters, use of mountain water is superior, river water mediocre, well water inferior.” That is to say, the water source for steeping tea is also critical.

水不仅仅对茶重要,也对支持生命重要。但是如今世界上有六亿个人却没有安全的水资源。 在全球各地水资源也是不均衡地分配。加拿大有丰富的水资源,仅在北美五大湖之中,加拿大占有全球淡水供给的21%。由于污染和气候变化淡水可获得性也许将会受到很大的影响。在中国,据水利部的数据,在东部的主要平原流域,从井口取的地下水,超过百分之八十由于污染问题不安全饮用。

 

Water is not only important for tea, but also important for supporting life. Yet, today, around the world, there are over 600 million people who have no safe drinking water sources. Globally, water resources are also unevenly distributed. Canada has rich water resources, possessing 21% of the global supply of fresh water in just the Great Lakes alone. Due to pollution and climate change, fresh water availability may be greatly affected. In China, according to data from the Water Resources Ministry, in the major eastern flatland watersheds, more than 80% of underground water drawn from wells is unsafe for drinking because of pollution.

我来自加拿大,从我所经历过而言,仅在加拿大内,这个国家有很多地方的淡水水资源不适合饮用。有些地方,水必须先烧开才能饮用,在其他地方,水只适合用于洗澡、洗衣服、洗盘子。仅在加拿大萨斯喀彻温省,那里的饮用水比较接近于拉斯维加斯的自来水,用来泡茶的效果非常差,那是因为矿物质含量过高。这意味着任何茶类,例如白茶、铁观音、茉莉花茶等都不适合用当地的自来水用来泡茶,而代替,总是必须使用瓶子装的矿泉水,否则完全破坏茶汤的质量。


I am from Canada, and speaking from experience, in Canada alone, there are many areas of the country wher the fresh water resources are unfit for drinking. In some places, the water must be boiled first; in others, the tap water is only suitable for washing and bathing. In Saskatchewan, the drinking water is like that of the tap water in Las Vegas, poor for steeping tea; because of high mineral content. This means that any tea, like white tea, tieguanyin, jasmine tea, etc. are unsuitable for steeping using the local water. Instead, bottled water must always be used, otherwise the tea is completely ruined.

随着当今人类科学技术的飞跃发展,企业可以在水源地灌装,然后销向全世界,所以伴随着水的流动,理论上只要是一泡好茶,那在世界上任何角落,都可以泡出一壶上乘的茶饮,这个困扰中国老祖宗几千年的问题,现在已不成问题。

 

With present human scientific technological advances, companies can bottle water at the source, then sell across the globe. So accompanying the flow of water, in theory; as long as there is a packet of good tea, then in any corner of the world, one can brew a pot of superior tea. This difficulty was a problem for the forebears of Chinese people for millennia, now it’s not a problem anymore.

无水不可论茶也。或许现在该考虑到水资源安全、水资源保障、水资源可持续性、和水资源主权。

 

Without water, there can be no discussion of tea. Perhaps now is the time to consider water resource safety, water security, water sustainability, and water sovereignty.
